Regulations governing kitchen exhaust ventilation play a pivotal role in ensuring safety, health, and compliance with building codes in New York City. These requirements were created to address the unique challenges of a densely populated urban environment and are crucial for both residential and commercial kitchens.


New York City's Department of Buildings (DOB) oversees and enforces the regulations pertaining to all kitchen exhaust ventilation. These regulations are designed to address several key concerns, ranging from fire safety to air quality. One of the primary requirements is the installation of an exhaust system that effectively captures and removes cooking byproducts, such as grease, smoke, and odors, from the kitchen space.


For commercial kitchens– whether in restaurants, hotels, or catering facilities– the exhaust system must comply with the specific guidelines set forth by the DOB. This includes the installation of exhaust hoods that meet the standards outlined in the Mechanical Code. These hoods are required to extend over cooking equipment, effectively capturing and containing airborne contaminants.


Additionally, the exhaust system must be equipped with an appropriately sized and rated fan, capable of efficiently removing the volume of air produced during cooking processes. The fan must discharge the air to the exterior of the building, ensuring that contaminants are expelled safely and do not recirculate within the kitchen or any other portion of the building.


In residential buildings, with smaller-scale kitchens, specific guidelines still apply. The DOB mandates the installation of range hoods or exhaust fans in residential kitchens to effectively ventilate cooking spaces. These systems must comply with building codes to ensure the safety and well-being of residents.


Regular maintenance and inspection of kitchen exhaust systems are integral to compliance with New York City regulations. Building owners and operators are responsible for ensuring that exhaust systems are kept in good working condition, with periodic cleanings to prevent the buildup of grease and other combustible materials.


Failure to comply with these regulations can result in penalties and, in extreme cases, the closure of non-compliant establishments. The stringent requirements reflect the city's commitment to maintaining a safe and healthy environment for both residents and visitors.
